Modern young people are accustomed to junk food, Western food, Japanese sushi and other stuff liberally seasoned with flavors. But is it all can be compared with the normal food?  Yes, sometimes it was difficult to get the ingredients in the Soviet Russia, but almost every family prepared one or more classical Soviet salads at the great feast. And these are the recipes that I want to share with you.

Salad with processed cheese and garlic

300 g processed cheese
3 boiled eggs
3 garlic cloves
salt, pepper, mayonnaise

Cheese should be for some time in the freezer, then rub it on a coarse grater and mix it with chopped eggs and minced garlic. Add mayonnaise, salt and pepper. The mixture can be spread on a loaf bread, as an appetizer.

“Mimosa”
1 canned saury
400 g boiled potatoes
300 g boiled carrots
4 boiled eggs
1 bulb onion
150 g grated cheese
mayonnaise, salt and pepper

Reveal the jar, pour out the excess fluid (not all, because it is needed for juiciness) and spread on a wide plate as the first layer. Add mayonnaise and spread.  Separate the whites from the yolks, rub them on a grater, spread over the fish and gain spread with mayonnaise. Then a layer of grated carrot and mayonnaise. Further a layer of onions and grated potatoes. And grease with mayonnaise. Then again, cheese and mayonnaise and sprinkle with grated yolks on top of the dish. No need to pour a lot of mayonnaise, otherwise it would be too fat. The order of the layers can vary. But it is always fish on the bottom and cheese and egg yolks on top.

Herring under a fur coat (Shuba)

350 g herring fillets
3 boiled carrots
3 boiled beets (preferably large),
4 (500 g) boiled potatoes
1 bulb onion

Cut herring into small cubes, remove bones and spread a layer on the bottom of a large dish. Add mayonnaise. Grate potatoes on a coarse grater, spread as a layer, grease with mayonnaise. Then a layer of carrots and mayonnaise. Then the eggs and mayonnaise, and grated beets on the top. In the process of eating, the layers can be mixed, but it’s as you like.

Raw beetroot salad (Vinegret)

600 g boiled potatoes
400 g boiled beets
400 g boiled carrots
400 g pickled cabbage
200 g pickled cucumbers
Cut every ingredient into large (required!) cubes, mix in a large pan, dress with oil, salt and pepper. Sour cabbage and cucumbers are perfectly combined with the sweet beet.
